EASY SCALLOPED POTATOES This is wonderful with just about any entree. In fact, if you wanted to make a “complete meal in a dish”, simply dice up 1 ˝ cups extra-lean ham and layer it right along with the potatoes.
4 cups (20 ounces) thinly sliced cooked potatoes 1 cup finely chopped onion 1 (10 3/4-ounce) can Healthy Request Cream of Mushroom Soup 1/2 cup fat-free milk 2 teaspoons dried parsley flakes 1/8 teaspoon black pepper Dash paprika
Preheat oven to 375 degrees. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray. Layer half of potatoes and onion in prepared baking dish. In a medium bowl, combine mushroom soup, milk, parsley flakes, and black pepper. Spread half of soup mixture over onion. Repeat all layers. Lightly sprinkle top with paprika. Bake for 30 minutes. Place baking dish on a wire rack and let set for 5 minutes. Divide into 4 servings.
