2 cups chopped fresh cauliflower 1 1/2 cups frozen peas, thawed 3/4 cup chopped celery 1/4 cup chopped onion 3/4 cup (3 oz) shredded reduced-fat cheddar cheese 1/2 cup Kraft fat-free mayonaise (I used Miracle Whip) 1/4 cup Kraft fat-free ranch dressing 1 teaspoon dried parsley flakes 2 teaspoons Splenda
In a large bowl, combine cauliflower, peas, celery, onion and cheddar cheese. In a small bowl, combine mayo, ranch dressing, parsley flakes and Splenda. Add dressing mixture to cauliflower mixture. Mix gently to combine. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving.
Hint: Thaw peas by placing in a colanader and rinsing under hot water for one minute.
