Orange Glazed Carrots
You'll be delighted and amazed how easily your microwave turns a few sliced carrots and some spreadable fruit into a luscious dish that's gorgeous enough to serve at a dinner party! Since carrots are already naturally sweet, this is a great way to highlight that sweetness - and provide a colorful addition to any feast.
Serves 4 (full 3/4 cup)
2 (16-ounce) cans sliced carrots, rinsed and drained
2 teaspoons I Can't Believe It's Not Butter Light Margarine
1 teaspoon dried parsley flakes
2 tablespoons orange marmalade spreadable fruit
In an 8-cup glass measuring bowl, combine carrots, margarine, parsley flakes, and spreadable fruit. Cover and microwave on HIGH (100% power) for 5 minutes. Let set 2 to 3 minutes. Gently stir again just before serving.
