I've made the "Eggplant Pizza" a couple of times
and it's pretty good! It tastes like a cross between
eggplant parmesan and pizza. I spray my
unpeeled slices with olive oil and then put garlic,
oregano, basil, and salt and then another light
squirt of oil and then bake them till mostly
tender. Then I seasoned tomato paste (no sugar)
with a little splenda, more garlic and spices and
spread with on each slice. Then topped with
cheese, and pepperoni and baked till the cheese
was melted. It's a fun one to play with and the
varieties are endless.
