Amount Measure Ingredient -- Preparation Method

8 ounces ground beef, extra lean
1/2 cup sliced mushrooms -- drained
1/2 cup chopped green bell pepper
1/2 cup chopped onion
1/3 cup black olives -- sliced
1 3/4 cups tomato sauce -- (15 oz can)
1/2 Tablespoon sugar substitute
1 teaspoon Italian seasoning
1 can Pillsbury refrigerated biscuits -- 7.5 oz can
1/3 cup reduced fat cheddar cheese -- 1 1/2 ounces
1/3 cup reduced fat mozzarella cheese -- 1 1/2 ounces

Preheat oven to 350 degrees. Spray an 8 by 8 inch baking dish with olive flavored
cooking spray. Brown meat iIn a large skillet sprayed with olive flavored cooking spray.
Add mushrooms, green pepper, onion and olives. Mix well to combine. Stir in tomato
sauce, sugar substitute and Italian seasoning. Remove skillet from heat. Separate
biscuits and cut each biscuit into 4 pieces. Gently stir biscuit pieces into meat mixture.
Pour mixture into prepared baking dish. Bake 20 minutes. Sprinkle shredded cheddar
and mozzarella cheese evenly over the top. Continue baking until cheese melts, about
10 minutes. Place baking dish on a wire rack and let set 5 minutes. Cut into 6 servings.

Each serving equals:
Diabetic: 2 Vegetable, 1 1/2 Meat, 1 Starch
215 calories, 7 gm fat, 14 gm protein, 24 gm carbohydrate, 1052 mg sodium, 2 gm
fiber.
HE: 1 2/3 Vegetable, 1 1/2 Protein, 1 1/4 Bread, 1/4 Fat, 1 Optional calorie
