Diabetic Exchanges-1 Fruit, 1/2 starch/carb
Caramel Apple Surprise Salad

2 Cups cored and diced Granny Smith apples
1 (8-ounce) can pineapple tidbits, packed in fruit juice, drained
2 tablespoons chopped dry-roasted peanuts
1 cup Cool Whip Lite
1 (2.05 ounce) Milky Way Light candy bar, cut into 18 pieces
In a large bowl, combine apples, pineapple and peanuts. Add Cool Whip Lite. Mix gently to combine. Fold in candy pieces. Cover and refridgerate for at least 30 minutes. Gently stir again just before stirring.
