Apple Gelatin Salad

While camping this past week I made this salad from Jo's,
Grandma's Comfort Food - Made Healthy.
It was very good and one I will make often.

Apple Gelatin Salad

3 cups unsweetened apple juice *
1 c. water
2 (4 oz) pkgs. Jello s/f lemon gelatin
1 c. (2 sm.) cored, unpeeled, and chopped Red Delicious apples
1/4 c. (1 oz) chopped pecans
1 c. chopped celery

In a medium saucepan, bring 2 cups apple juice and water to a
boil Remove from heat, Add dry gelatin. Mix well to dissolve
gelatin. Stir in remaining 1 c. apple juice. Add apples,
pecans, and celery. Mix well to combine. Pour mixture into an
8 x 8 dish. Refrig. until firm, about 3 hours. Cut into 8
servings.

Each serving equals: HE 1 fruit, 1/2 fat, 1/2 veg.
10 optional calories

91 calories, 3 gm fat, 1 gm protein, 15 gm carb, 71 mg sod,
17 mg cal, 1 gm fiber

Diabetic 1 fruit 1/2 fat 1/2 veg.

I made 1/2 a recipe and put into a pyrex dish that is not
quite 8 x 8. It still was 4 good size servings.

For two people, I would only make 1/2 a recipe as the apples
discolored a little the second day.

I used a Gala apple. 2 pts each serving WW
