1 1/2 cups all-purpose flour 1 cup (3 ounces) quick oats 1 cup raisins 1/4 cup Brown Sugar Twin 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon JO's Apple Pie Spice 1 cup skim milk 2 tablespoons Land O Lakes no-fat sour cream 1/2 cup unsweetened applesauce 1 egg or equivalent in egg substitute
Preheat oven to 375 degrees. Spray a 12-hole muffin pan with butter-flavored cooking spray or line with paper liners. In a large bowl, combine flour, oats, raisins, Brown Sugar Twin, baking powder, baking soda and apple pie spice. In a small bowl, combine skim milk, sour cream, applesauce and egg. Mix well with fork to combine. Add milk mixture to flour mixture. Mix just until moistened (batter will be lumpy). Evenly divide batter into prepared muffin wells. Bake for 18 to 23 minutes or until a toothpick inserted in center comes out clean. Place muffin pan on a wire rack and let set for 5 minutes. Remove muffins from pan and continue cooling on wire rack. Serves 12.
