Taco Pasta

If you have any taco fans in your bunch, be sure to serve this soon. It's just as colorful as it is delicious - just right for a private fiesta!

16 oz extra lean ground sirloin beer for turkey breast
1 cup chopped onion
1 (8 oz) can Hunt's Tomato Sauce
1/4 cup water
1 tablespoon JO's Taco Seasoning or any taco seasoning
1/2 cup ( 1 1/2 oz) chopped ripe olives
3 cups cooked rotini pasta, rinsed and drained
1 cup + 2 tablespoons (4 1/2 oz) shredded Kraft reduced fat Cheddar cheese

In a large skillet sprayed with olive oil flavored cooking spray, brown Meat and onion. Stir in tomato sauce, water and JO's Taco Seasoning. Bring mixture to a boil. Stir in olives and rotini pasts. Lower heat cover and simmer for 5 to 7 minutes, stirring occasionally. Add Cheddar cheese. Mix well to combine. Serve at once.

Serves 6 (1 cup) - Each serving equals:

Diabetic: 3 Mt, 1 Ve, 1 St

HINT: Usually 2 1/2 cups uncooked rotini pasts cooks to about 3 cups
