Z-Heart's Banana Salad serves 6 (2/3 cup)
From Strong Bones cookbook

1 (4 serv) pkg. Jello s/f instant banana pudding mix
2 recipes Jo's Evaporated Skim Milk (recipe below)
1 cup (one 8 oz can) crushed pineapple, packed in fruit juice, undrained
1/2 cup Cool Whip Free
2 cups (2 medium) diced bananas
1/2 cup (1 oz) mini marshmallows

In a large bowl, combine dry pudding mix, JO's Evap. Skim milk and undrained pineapple. Mix well using a wire whisk. Blend in Cool whip Free. Add bananas and marshmallows. Mix gently to combine. Cover and refrig. for at least 30 min. Gently stir agin just before serving.

HINT: to prevent bananas from turning brown, mix with 1 tsp. lemon juice or sprinkle with Fruit Fresh.

Each serving equals:
HE: 1 fruit, 1/3 skim milk, 1/4 slider, 15 opt calories

140 calories, 0 fat, 3g protein, 32g carbo, 274mg sodium, 101mg calcium, 1g fiber

Diabetic: 1 fruit, 1 starch/carbo

Jo's Evaporated Skim Milk
2 recipes

2/3 cup Carnation n/f dry milk powder
1 cup water

In a bowl, combine dry milk powder and water. Mix well. Makes 1 cup
