Polynesian Ham serves 4
From May 1992 Newsletter p.5
And Jo's Kitchen Cafe Favorites p.49

2 cups hot cooked rice
1 1/2 cups (8 oz) cubed Dubuque 97% f/f ham or any extra lean ham
1 (8 oz) can pineapple tidbits, packed in fruit juice, undrained
1 cup green bell pepper, cut in large chunks
3 tabl. Brown Sugar Twin or Splenda Granular
1 tabl. cornstarch
2 tabl. white distilled vinegar
1 tabl. low sodium soy sauce
1/2 cup water

In a large skillet sprayed with butter flavored cooking spray, brown ham cubes. Add undrained pineapple and green pepper. Lower heat, cover and cook for 15 min. In a small bowl, combine cornstarch and Brown Sugar Twin. Stir in vinegar and soy sauce. Add water and mix well to blend. Add to ham mixture and cook until mixture comes to a boil and sauce thickens, stirring constantly. Serve over hot rice.

Serves 4 - Each serving equals:
190 calories, 2g fat, 12g protein, 31g carbo, 576mg sodium, 20 mg. calcium, 1g fiber
