Another great recipe. I have made this a LOT.

I add finely diced celery and other than that I go exactly by the recipe.

This is also very good made with tuna.

Grandma's Salmon Loaf serves 6
From HELP H E Lifetime Plan p.260
and Jo's Kitchen Cafe Favorites p.44

2/3 cup Carnation n/f dry milk powder
1 1/3 cups water
1 (14 3/4 oz) Can salmon with juice, flaked
1/4 cup chopped onion
28 small f/f saltine crackers, made into crumbs
1 egg or equivalent in egg substitute
1/4 tsp. lemon pepper

Preheat oven to 350 degrees. Spray a 9 x 5 loaf pan with butter flavored cooking spray. In a large bowl, combine dry milk powder and water. Add salmon, onion, cracker crumbs, egg and lemon pepper. Mix well to combine. Let set for 2 - 3 min. for crackers to absorb moisture. pat into prepared loaf pan. Bake for 40 - 45 min. Place baking dish on a wire rack and let set for 5 min. Cut into 6 pieces.

Serves 6, each serving equals
183 calories, 5g fat, 18g protein, 16g carbo, 545mg sodium, 1g fiber

Diabetic: 2 meat, 1 starch, carb choice 1
