Momma's Porcupine Meatballs serves 6
From Heart Smart Cookbook

16 oz. gr. 90% lean turkey or beef
1 cup (3 oz) uncooked Minute Rice
1/4 cup finely chopped onion
1 (10 3/4 oz) can Healthy Request tomato soup (divided)
3/4 cup Healthy Request tomato juice or any reduced sodium tomato juice
1/4 tsp dried minced garlic
1 tsp. prepared mustard

In a large bowl, combine meat, uncooked rice, onion and 1/4 cup tomato soup. Form into 24 (1 inch) meatballs. Place meatballs in a large skillet sprayed with butter flavored cooking spray, and brown meatballs for 3 - 4 minutes. Meanwhile, in a medium bowl, combine remaining tomato soup, tomato juice, garlic and mustard. Pour mixture evenly over meatballs. Lower heat, cover and simmer for 20 min., stirring occasionally. for each serving place 4 meatballs on a plate and spoon about 3 tabl. sauce over top.

Each serving equals:
HE: 2 protein, 1/2 bread, 1/3 veg, 1/4 slider, 10 opt calories

179 Calories, 7g fat, 15g protein, 14g carbo, 254mg sodium, 12mg calcium, 1 fiber

Diabetic: 2 meat, 1 starch
