Stovetop Chicken and Broccoli serves 4 (1 cup)
From Heart Smart Cookbook

1 1/3 cups (3 oz) uncooked elbow macaroni
2 cups frozen cut broccoli, partially thawed
2 cups water
1 (10 3/4 oz) can Healthy Request Cream of Broccoli soup
1/2 cup skim milk
1/8 tsp. black pepper
1 cup (5 oz) diced cooked chicken breast

In a large saucepan, combine uncooked macaroni, broccoli, and water. Cook over medium heat about 10 min. or until both macaroni and broccoli are tender. Drain. Return to saucepan. Add broccoli soup, skim milk and balk pepper. Mix well to combine. Stir in chicken. Lower heat and simmer for 5 min. or until mixture is heated through, stirring occasionally.

HINT: If you don't have leftovers, purchase a chunk of cooked chicken breast from your local deli.

Each serving equals:
HE: 1 1/4 protein, 1 bread, 1 veg, 1/2 slider, 13 opt. calories

199 calories, 3g fat, 17g protein, 26g carbo, 371mg sodium, 151mg calcium, 2g fiber

Diabetic: 1 1/2 starch, 1 meat, 1 veg.
