Five-Cup Salad serves 4 (2/3 cup) From Healthy Exchanges Cookbook
1 cup (one 11 oz can) mandarin oranges, rinsed and drained 1 cup (one 8 oz can) pineapple chunks, packed in their own juice, drained 2 tabl. flaked coconut 1/2 cup (1 oz) mini marshmallows 3/4 cup plain f/f yogurt sugar substitute to equal 4 tsp. sugar 1 tsp coconut extract
In a medium bowl, comgine orange sections, pineapple chunks, coconut and marshmallows. In a small bowl, comgine yogurt, sugar substitute and coconut extract. Add to orange mixture. Mix gently to combine. Cover and refrig. for at least 2 hours.
