Lemon Fluff Salad serves 6 (2/3 cup)
From Healthy Exchanges Cookbook

1 (4 serv) pkg. Jello s/f instant vanilla pudding mix
1 (4 serv) pkg. Jello s/f lemon gelatin
2/3 Carnation n/f dry milk powder
1 1/4 cup water
2 cups (one 16 oz can) fruit cocktail, packed in juice, drained (reserve liquid)
3/4 cup Cool whip Lite
1/2 cup (1 oz) mini marshmallows

In a medium bowl, combine dry pudding mxi, dry gelatin and dry milk powder. Add water and reserved fruit cocktail liquid to dry pudding mixture. Mix well using a wire whisk. blend in Cool Whip Lite, fruit cocktail and mini marshmallows. Cover and refrig. for at least 30 min.

Each serving equals:
HE: 2/3 Fr, 1/3 SM, 1/2 SL, 6 OC

120 calories, 1g fat, 4g protein, 24g carbo, 296mg sodium, 0 fiber

Diabetic: 1 Fr, 1/2 St

Ann's note: This was very good but more like a custard. I also used lemon pudding instead of vanilla.
