8 oz extra-lean ground sirloin beef or turkey breast 1 teaspoon JO's Sausage Seasoning 12 slices reduced-calorie white bread, cut into cubes 1 1/2 cups (6oz) shredded Kraft reduced-fat Cheddar cheese 2/3 cup Carnation Nonfat Dry Milk Powder 3/4 cup water 4 eggs or equivalent in egg substitute 1 cup chunky salsa (mild, medium or hot) 1 teaspoon dried parsley flakes
Prehear oven to 350 degrees. Spray an 8x8 inch baking dish with olive oil-flavored cooking spray. In a large skillet sprayed with olive oil-flavored cooking spray, brown meat. Stir in JO's Sausage Seasoning. Spoon meat mixture into prepared baking dish. Layer bread cubes and Cheddar cheese over top. In a large bowl, combine dry milk powder and water. Add eggs, salsa, and parsley flakes. Mix well to combine. Pour mixture evenly over top. Bake 40-45 minutes or until a knife inserted in center comes out clean. Place baking dish on a wire rack and let set for 5 minutes. Divide into 6 servings.
Hints: (1) 1/2 teaspoon poultry seasoning, 1/4 teaspoon ground sage, & 1/4 teaspoon garlic powder may be used in place of JO's Sausage Seasoning. (2) If desired, cover baking dish with foil and refrigerate for 2 to 24 hours before baking. Be sure to remove foil before placing in the oven.
