Coney Island Boardwalk Casserole Serves 6 (1 full cup) From June 2002 Newsletter
8 oz. extra lean gr. sirloin beef or turkey breast 1 cup finely chopped onion 1/2 cup finely chopped green bell pepper 8 oz. Healthy Choice 97% f/f frankfurters, diced 3 cups cooked elbow macaroni 1 (8 oz) can Hunt's Tomato Sauce 1 (8 oz) can tomatoes, finely chopped and undrained 2 tabl. Splenda Granular
In a large skillet sprayed with butter flavored cooking spray, brown gr. meat, onion and green pepper. Stir in frankfurters and macaroni. Add tomato sauce, undrained tomatoes and Splenda. Mix well to combine. Lower heat and simmer for 6 - 8 min. or until mixture is heated through, stirring occasionally.
