Fudgy Peanut Butter Brownies Serves 8 (2 each)

1 1/2 cups Bisquick Reduced Fat Baking Mix
1 (4 serv) pkg. Jello s/f instant chocolate fudge pudding mix
1/2 cup creamy Peter Pan reduced fat peanut butter
1 cup unsweetened applesauce
1 tsp. vanilla extract
2 eggs or equivalent in egg substitute

Preheat oven to 350 degrees. Spray and 11 x 7 baking pan with butter flavored cooking spray. In a large bowl, combine baking mix and dry pudding mix. Add peanut butter, applesauce, vanilla extract, and eggs. Mix well to combine. Spread better into prepared baking pan. Bake for 20 - 25 min. Place baking pan on a wire rack and allow to cool completely. Cut into 16 bars.

Each serving equals:
HE: 1 1/4 protein,(1/4 limited) 1 bread, 1 fat, 1/4 fruit, 18 optional calories

229 cal, 8g fat, 7g protein, 30g carbo, 518mg sodium, 25mg calcium, 2g fiber

Diabetic: 2 starch/carbo, 1 meat, 1/2 fat
