Peanut Butter Popcorn Balls serves 2
From Grandma's Comfort Food Made Healthy

1 tabl. white corn syrup
2 tabl. Peter Pan reduced fat creamy peanut butter
2 tabl. Brown Sugar Twin
1/2 tsp. vanilla extract
2 cups popped popcorn

In an 8 cup glass measuring bowl, mix corn syrup, peanut butter, Brown Sugar Twin and vanilla extract. Cover and microwave on HIGH (100% power) for 30 - 40 seconds, or until mixture begins to bubble. Stir well to combine. Add popped popcorn. Mix well to coat. Place bowl on a wire rack and let set for 2 - 3 min. Shape popcorn mixture into 2 balls. Cool completely. Wrap each popcorn ball in plastic wrap.

HINTS: 1 tabl. + 1 tsp. unpopped popcorn will bake about 2 cups in an air popper.

2 balls form more easily if you dip your hands in cold water before shaping.

Each Serving equals:
HE: 1 protein, 1 fat, 1/3 bread, 1/4 slider, 15 optional calories

149 cal, 6g fat, 5g protein, 21g carbo, 88mg sodium, 1mg calcium, 2g fiber

Diabetic: 1 starch/carbo 1/2 meat, 1/2 fat
