Greek Feta Salad
JoAnna M. Lund

I think Zorba The Greek would approve.
Serves 4 (2 cups)

3 cups shredded lettuce
1 1/4 cups chopped cucumber
1 cup chopped tomato
1/2 cup chopped green bell pepper
1/4 cup chopped onion
3 oz cubed Feta cheese (3/4 cup)
1 oz sliced ripe olives (1/4 cup)
2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley flakes
1/4 cup fat-free Ranch dressing
2 tablespoons fat-free Italian dressing

In a large bowl combine lettuce, cucumber, tomato, green pepper, onion, Feta cheese, olives and parsley. Mix well. Cover and refrigerate. Just before serving, combine Ranch dressing and Italian dressing. Pour mixture over lettuce mixture. Toss gently to combine.
