This was the second thing I made from Joanna's recipes and one of the one's that sold me to her cookbooks. I have most of them, newsletters, cookbooklets....yowsie


Lazy-day Lasagna
8 ounces ground 90% lean turkey or beef
2 cups hot cook mini lasagna noodes -- rinsed and drain (divided)
1 3/4 cups Hunt's Tomato Sauce -- (one 15-ounce can) 1 cup fat-free cottage cheese
1 teaspoon Italian seasoning
4 slices Kraft reduced-fat mozzarella cheese -- (3/4-ounce)
2 teaspoons Sugar Twin or Sprinkle Sweet


Instructions for Lazy-day Lasagna
Preheat ove to 375 degrees. Spray an 8-by-8-inch baking dish with olive oil-flavored cooking spray. In a large skillet sprayed with olive oil-flavored spray, brown meat. Stir in tomato sauce, Italian seasoning, and Sugar Twin. Arrange 1 cup noodles in prepared baking dish. Spoon 1 1/4 cups meat sauce and cottage cheese over top. arrange remaining 1 cup noodles over cottage cheese. Evenly place mozzarella cheese slices over noodles and spoon remaining meat sauce over top. Bake for 30 to 35 minutes. Place baking dish on a wire rack and let set for 5 minutes. Cut into 4 servings.

Hints:

1. 1 3/4 cups uncooked lasagna noodles usually cooks to about 2 cups.
2. Regular noodles may be used in place of lasagna noodles.

Each serving equals:
HE: 3 protein, 1 3/4 vegetable, 1 bread, 1 optional calorie
292 calories, 8 gm fat, 28 gm protein, 27 gm carbohydrate, 984 mg sodium, 167 mg calcium, 3 gm fiber
DIABETIC: 3 meat, 2 vegetable, 1 starch
