Do the men you know love tapioca as much as Cliff does? I think it's such a popular food because of those cozy memories it brings back, of meals with the family gathered around, and afternoons at Grandma's. This is a special mix of tastes I stirred up to please my "truck-drivin' man"--and it really did!
In a large saucepan, combine dry pudding mix, tapioca, skim milk, and dry gelatin. Mix well using a wire whisk. Let set 5 minutes. Cook over medium heat, stirring constantly until mixture thickens and starts to boil. Remove from heat. Pour mixture into a large bowl and place bowl on wire rack. Cook 30 minutes. Add Cool Whip Lite, mandarin oranges, and pecans. Mix gently to combine. Cover and refrigerate at least 15 minutes or until ready to serve. Gently stir again just before serving.
