Basic Waldorf Salad

I haven't met a man yet who doesn't love Waldorf Salad. Their moms used to bring it out only on special occasions, so they equate it with times to celebrate. This version will surely get cheers!

Serves 4 (2/3 cup)

1/2 cup Kraft fat-free mayonnaise
1 teaspoon lemon juice
Sugar substitute to equal 2 teaspoons sugar
2 cups (4 small) cored, unpeeled, chopped Red Delicious apples
1/2 cup chopped celery
1/2 cup (1 ounce) miniature marshmallows
1/4 cup (1 ounce) chopped walnuts

In a medium bowl, combine mayonnaise, lemon juice, and sugar substitute. Add apples, celery, marshmallows, and walnuts. Mix gently to combine. Cove and refrigerate at least 30 minutes. Gently stir again just before serving.

Each serving equals:
HE: 1 Fruit, 1/2 Fat, 1/4 Vegetable, 1/4 Protein, 1/4 Slider, 12 Optional Calories
