Chili Veggie Soup

This is a super-convenient chili that includes all the traditional vegetables men like best--and none of those "funny" ones! It's especially hearty, too, with the combination of beef broth and tomato sauce, please just enough kidney beans to give it the "feel of a meal." of course, not every man loves traditional chili. I remember when my son Tommy was six and get his foot caught in his bike and had to get it x-rayed. They asked me, Is he allergic to anything? Just kidney beans, he piped up. so if you have anyone in your family who is "allergic" to kidney beans, just leave them out.

Serves 6 (1 1/2 cups)

8 ounces ground 90% lean turkey or beef
1/2 cup chopped onion
1 3/4 cups (one 15-ounce can) Hunt's Chunky Tomato Sauce
1 3/4 cups (one 15-ounce can) Swanson Beef Broth
1 cup water
2 teaspoons chili seasoning
1/2 cup chunky salsa (mild, medium, or hot)
1 1/2 cups frozen cut green beans
1 1/2 cups frozen cut carrots
1 cup frozen whole kernel corn
1 cup frozen peas
6 ounces (one 8-ounce can) red kidney beans, rinsed and drained

In a large skillet sprayed with butter-flavored cooking spray, brown meat and onion. In a crockpot container, combine browned meat mixture, tomato sauce, beef broth, water, chili seasoning, and salsa. Stir in green beans, carrots, corn, peas, and kidney beans. Cover. Cool on LOW 6 to 8 hours.

Each serving equals:
HE: 2 1/2 Vegetable, 1 1/2 Protein, 2/3 Bread, 5 Optional Calories

180 Calories, 4 gm Fat, 13 gm Protein, 23 m Carbohydrate, 840 mg Sodium, 5 gm Fiber

DIABETIC: 2 Vegetable, 1 1/2 Meat, 1 Starch
