This was a "major league hit" when I served this to the ladies helping with the newsletter.
8 ounces ground 90% lean turkey or beef 1/2 cup chopped onion 1/4 cup chopped green bell pepper 1/2 cup (one 2.5-ounce jar) sliced mushrooms, drained 1 cup frozen corn 1 cup (8-ounce can) Hunt's Tomato Sauce 1 tablespoon chili seasoning 3/4 cup Bisquick Reduced Fat Baking Mix 3/4 cup chunky salsa (mild, medium or hot) 1/2 cup (1 1/2 ounces) shredded Kraft reduced-fat Cheddar cheese
Preheat over to 350 degrees. Spray an 8-by-8-inch baking dish with olive oil-flavored cooking spray. In a large skillet sprayed with olive oil-flavored cooking spray, brown meat, onion and green pepper. Add mushrooms, frozen corn, tomato sauce, and chili seasoning. Mix well to combine. Pout mixture into prepared baking dish. In a medium bowl, combine baking mix and salsa. Stir in Cheddar cheese. Spread mixture evenly over meat mixture. Bake for 25 to 30 minutes. Place baking dish on a wire rack and let set 5 minutes. Cut into 6 servings.
