Yeah I had noticed that with plain pudding, but when I used it the pudding mix and soy milk in the bread pudding it did ok. :(

Thanks for letting us know, Heather. I noticed on the Jello sugar-free, fat-free instant puddings they recommend you don't substitute soy milk because it won't set.

ok I hate to report this, but the soy milk did not work in the custard at all! Made it tasteless, and the texture was not near as rich and creamy as with the dry milk powder. So sticking with the dry milk powder for this one girls!

This is the first one it just didn't work with.

Oh yeah, I really like the soy milk in my tea! And a few other things too. But, definitely not this one.

Thanks for the info! I will have to try using soy milk in some things and see if Hubby can tell the difference or not.. LOL!

So far on the recipes I have tried it in, there is no taste difference. I will be tasting the custard soon! (about a hour from now). And I'll let you know. But, when I have used it in bread pudding like the chocolate peanut butter bread pudding from Open Road cookbook, I did not taste any difference at all! :)

I have never tried soy milk. DOes it change the taste of the foods you are cooking or can you really not tell the difference?

Well, it depends on the soy milk you choose. Some are high calorie some are low.

The one I use is VERY low calorie.

I use 8th Continent Original Light. (light being the key word here!) It's 45 calories per 8 oz.

1/3 cup of dry non fat milk powder is 90 calories.

1 cup/8 oz of your average 1% or Skim Milk is 90 calories.

So the light 8th continent is 1/2 the calories of skim or milk powder.

However, Silk's Light and other "light" soy milks are NOT that low of calories. So you have to read the labels.

Your recipes look good, Heather.
DH is lactose intolerant so we often use soy milk for him - I didn't realise it would cut the calories, too.

I have to say, I will for the rest of my life be grateful to JoAnna. If it wasn't for her recipes, I seriously don't believe I could of stayed on plan all these years, and I would of more then likely gained a ton of weight in these years, instead of losing and maintaining where I am now.

There was so many foods I never thought I would have again once I was diagnosed with diabetes. And boy did JoAnna come through!

Well, many of her recipes, once I got the idea, of how she did it to make it healthy! It becomes like dominoes falling, one thing leads to another and before I know it I have a whole new recipe of my own! Using Jo's techniques.

Any way, I made a recipe book of my own here on Spark, many of the recipes may look familiar! lol haha They are ones I converted into something else entirely by using the HE ways.

The Strawberry Shortcake recipe is a variation of Easy Tiramisu, I took out the brandy extract, the water, and the coffee crystals. And added a quart of sliced strawberries. Boy is it good!!!!! I wish I would of taken pics last time I took it. But, I'll be sure to next time!

Lela's Ozark Custard Bread Pudding is a variation of Old-Time Custard Pie from a November Newsletter. I'm making it today another way! Today I'm using soy milk (light), that will bring the calories down by 40 calories a serving! If it comes out. I'll let you know. Next time I will try it with egg beaters! I didn't have any this time. I'll also take some pictures. I'll say the version I did post (I'll change it to soy milk if it works), I have had numerous times, and every one in the family loves it!
