Sounds like a coconutty day, Laura!

I had coconut chia pudding (the first batch I made lasted me 4 servings) and then a piece of haupia at lunch, holiday soup for the soul made with coconut oil for lunch, and then pumpkin oatmeal made with 1/2 c coconut milk, 1/2 c almond milk and shredded coconut for dinner. Feeling nice and full now!

I had TWO raw date squares after my workout (the ones I made with apricots instead of dates)
At lunch I cooked my eggs in coconut ghee
A great smoothie with coconut milk
Coconut ghee on my veggies at dinner
Coco Berry Granola bar before bed.

OOOH! I bought some coconut oil ghee today. organic viirgin coconut oil with organic ghee from grass fed cows. I'm hoping that ghee will be ok for me to eat. If not, it's good for the family.

I fried an egg this morning in 1 tsp. coconut oil - and had 2 tsp. in a minute muffin which I will have all of before the day is over.

Also, had some leftover pork steak that was fried in a little coconut oil from yesterday..

Tuna with coconut oil mayo, cocnut shrimp curry. I should have also had scrambled eggs in coconut oil but was late and had to go with hard boiled.

I love to sauté mushrooms and asparagus in CO and sprinkle it with herbamare (healthier season salt from health food store)
I also made a smoothie with 2T. melted CO in it. smoothie has coconut milk, CO, chia seeds, spinach, berries, wheat grass, fish oil, and liquid stevia if I want it sweeter.

Last night I threw together a stir-fry of brocolli and mushrooms with an asian "peanut sauce" (but I used my all-natural almond butter instead of peanut butter) - anyway, I stir-fried it in coconut oil, and the flavor blended really, really well with the peanut sauce. Soooo delicious.

3/31-Today is my first day experimenting with Coconut anything! I bought a can of Coconut Milk yesterday. Still learning so much about Coconut! Thanks to all of you for the awesome recipes & ideas, I can't wait to try a lot of them!

I tried to find shredded coconut at my supermarket, but all they had was sweetened. I assume their is a version of non-sweet somewhere else & is that what you all use?

Today I put 3 tbsp. of Coco. milk in my smoothie with frozen mixed fruit (bananas, strawberries & mango pieces), about a cup of Pineapple juice & 1 scoop of fat free frozen yogurt. Yummy! Not sure I like the flavor of the Milk by itself yet, but I am so glad I can put it in my dishes!!

Laura, I got the coconut cream powder at the supermarket. I live in Jamaica and using coconut milk is something we've done FOREVER.... without knowing the benefits!! I think that you should be able to find it in the Caribbean/Jamaican section of any of the larger supermarkets.



03/30 2 tbsps in my breakfast smoothie

03/31 1tbsp in my oatmeal & 2 tsps in my bedtime hot chocolate

I made a banana sticky bar for breakfast. Mashed 1.2 banana. added chopped pecans and coconut. Mixed. Formed into a bar in saran wrap and froze for 30 minutes.

Lunch Mixed some coconut may in with some cooked chicken breast for lunch.

So far today, I made the yummiest breakfast ever!
I too 2 scoops of chocolate hemp protein powder, added some coconut milk (mine's really thick so I added a bit of water too), 1/2 a mashed banana, some broken pecans and 1/2 tbsp of melted coconut oil. It was like eating dessert for breakfast!

You inspired me to try scrambling my eggs in coconut oil, so that's what I did this morning. Yum! I usually use cooking spray, so I might have just been enjoying the texture the added fat provides, but the flavor was really good too.

Today I had for breakfast some homemade veggie juice with my breakfast. 2 poached eggs on sauteed spinach & onions cooked in coconut oil. At lunch I sauteed some shrimp, peppers and bean sprouts in coconut oil and for a midday snack I had coconut milk in a protein shake.

The mayo is good!

Oh I'm enjoying all this information!! ;-)

Had mine in the smoothies...but definitely getting some more ideas! looking forward to making the coconut mayo!! Have a son that is allergic to soy, and lactose intolerant...loves mayo...hence...great tester! If DH and I like the coconut mayo - we'll just keep it on hand, too!!

Yeah I do have a recipe that I will have to tweak some before posting. I ended up messing it up but also the proprtions were off anyway from the guy I got it from. I saw the monkey bar recipe but that is too many carbs for me right now...

Oh and so you can LOL...I didn't realize that regular coconut milk separates and when I shook it nothing shook so I thought it was all solid...till I poked through to the milky part!! I used the fat off the top for the curry sauce!! emoticon

Can you please post a recipe for those monkey bars???? Sounds delicious!!!

I put coconut oil in my morning coffee and get in about 2 tablespoons a day with it. I also fry my eggs in it in the morning.

I also use coconut oil for cleansing and moisturizing my face, shaving my necessary areas and hair conditioner. I use it after my shower also to moisturize my body.

I no longer by conditioners, lotions or anything of that sort.

My husband uses it for his hair, moisturizing his body and shaving. No more hair bumps from ingrown hairs now.

We go through a LOT of coconut oil

OH! I LOVE coconut flour. I'm gonna try a re-make of a recipe I used to make when I was still eating grain.
They were called Monkey Bars... Banana slices in between a layer of cake/cooke base and a crumbly topping. I made them sugar free (used stevia), but they can also be made with sugar if desired.
Anyhow, I have some recipes for coconut flour cookies and cupcakes. I'm gonna try and whip up a batch of newly reformed MONKEY BARS later this evevning!

I haven't had any yet, but I just bought a bag of coconut flour and I can smell it every time I go into the kitchen. Almost like visiting a tropical beach, only there is less sand.

That's awesome. I rarely see raw, fresh coconuts here up in northern BC. I saw tham at the grocers once last year... that was it.

I love it raw! I go through one every couple days. It broke me out of my almond habit. Too much PUFA there!

Today, I am having coconut milk and coconut water in my post workout shake, coconut mayo in with my linch, coconut oil in my midafternoon shake.
Going out for dinner, otherwise I would also most likely have more coconut oil in there. Most likely stir fried veggies with protein.
