Had the most AWESOME lunch today. I had made some paleo zuccini bread (with CO), so I made french toast with it today. Fried it in coconut ghee. Topped it with Greek yogurt, berries and stevia sweetened boysenberry syrup.

He had been there 6 days with them finding esentially nothing, but after the nurse saw that, suddenly he is hyponatremic. They turned off the IV and wrote on the board his liquids are limited to 1000 cc a day and nothing is to be fed to him unless the RN sees, approves and counts the cc's. He was given a regular (cardiac) dinner tray. He tried two bites of pork, spit them out after chewing a minute. He tried a potatoe wedge and brought it up after a few seconds. He ate a slice of carrot and after chewing for 5 min, I suggested a sip of milk. He had two sips milk and two sips apple flavor ensure and a bite of chocolate chip cookie. He said it looked good but he just couldn't eat it.
So, no nutrition basically. Looks like we are losing him.

My Dad has been sleeping in the hosp for 6 days. His nurse woke him to take pills, I had 1/2 cup co and had him swallow his pills with it. He drank it all, ate some bites of avocado I brought and stayed awake, rather alert for 2 hours.
Hubby was mad at me, nurse was none too pleased as he is on a juice sugar based clear liquid diet. But, I have power of health care attorney and am an RN myself of 30 years. I think this was better than his usual donut for breakfast and bread with peanut butter for lunch which I think are all poison, like the clear liquids he has not been consuming.

My husband and I usually get ours by the tablespoonful. Oh and today I just had my first sample of Coconut Oil Fudge and it is soooo good. Really difficult to stop at just one serving. My husband loved it too.

I've been using coconut oil to grease my skillet before making garbanzo bean flour crepes. I haven't had much luck using it to grease baking pans, though. Stuff seems to stick. Maybe I need to grease AND flour.

I use it as a base in almost every green smoothie I make (I drink 2-4 a day). Today I started with a coconut water, Swiss chard, celery and pear and blueberry smoothie. Divine! It tastes so much better than plain water and is so beneficial. I also make buckwheat with shredded pear pancakes and cook them in virgin coconut oil, and use coconut spread with homemade berry syrup. Everyone loves them.

I am a newbie to CO but wanted to share my uses.
I cook and bake with CO. I really like it in rice, veggies, greens and used on meat when cooking.

I made some banana muffins over the weekend with it and they came out so moist and yummy. My kids even requested them again. (It seemed the CO worked well with the wheat flour and flax) The muffins also had applesauce for the moisture but only 1/4 cup of CO made them great. I swear CO holds up better and does a better job!

I stir in some coconut oil (solid) into my hot oatmeal until it melts. It's an easy way to get it in. I tried it in my coffee but I just ended up with greasy coffee and couldn't drink it. I need other, easy ways to add this into my diet - will be checking out this thread throughout the day (at work so can't come online often and at night my internet is almost non-existant!).

I just started too. I bought a jar of unrefined organic coconut in my regular grocery store in the organic food section. When I put it in my coffee, I just shaved about a half teaspoon into it and then stirred. That worked. It's a good easy way to spread out getting in the coconut if you are having a hard time figuring out what to make and I got the idea from another member who put it in tea. You can also find coconut on amazon.com and I think you get free shipping if you buy enough. Just check the ad.

There is no such thing as extra virgin CO. Only Virgin CO, Raw Virgin CO or Refined CO. The refined is a good MCT but it lacks the antioxidant properties of the virgin oil.

KPIERCE67 the kind I use is not extra virgin either. I can't find extra virgin in stores yet. I use it to cook with every night. It works well for me. Also, it seems like the coconut oil does a better job.

I have coconut oil (it is solid) but I didn't realize I grabbed the jar that isn't "extra virgin" or whatever. Is it still ok to use? I saw someone used it in their coffee - I wondered about that too. How much would you stir in - a tablespoon? I want to try seeing some of the benefits but just don't have enough knowledge yet!

Also I cannot get coconut anything (except the baking kind) in my town and I am hours away from a major centre so it isn't easy to come by, which is too bad.

I realized recently that not all coconut water tastes the same. I got one I hated! I think the first one I tried tasted awesome! Just like fresh coconut water I had on vacation as a kid.

My youngest son loved it and wants some for during and after his baseball games over the summer. I like that there is no added sugar too.

I have been putting coconut on my yogurt in the mornings. Yummy!

Laura...I tried cinamon on my popcorn tonight after popping in CO and I loved it. Thanks for the idea.

I have never tried coconut water. Will have to check that out. I recently bought vanilla coconut milk and tried in my coffee. It didn't quite work for creamer for me. It was too watery.
Any ideas?

Yesterday I had coconut water for the first time since I was a child.

It was amazing! It tasted just like the fresh stuff I had on vacation when I was young. I plan to buy more of that one!

It had no added sugars or flavors, just plan pure coconut water.

CO in steel cut oats at breakfast, CO in left over stir fry at lunch, CO in mango/coconut tea afternoon, sauteed spinach in CO at dinner, and popcorn made in CO. Pretty easy to add to my diet!

Put some CO in my steel cut oats this am. At lunch I heated leftover chicken in CO then added franks hot sauce. Dinner I made a stir fry in CO with chicken and veggie mix, added dry ginger and garlic, soy sauce and sesame oil. My girls loved the stir fry. It seems the CO made the chicken moist. It was really good. Snack I made homemade popcorn in microwave with CO in place of the olive oil I usually use, again turned out great!

I am excited to see how adding CO to my diet will help me. Will keep you posted!

Popcorn recipe: 1/4 cup popcorn kernels, 2 tsp oil, 1/8 tsp salt put in brown paper lunch bag and shake, fold down to seal bag and lay on 2 papertowels and cook 2 min 30 seconds. Listen as you may have to pull out before if popping stops. I sprinkle mine with parm cheese.

I love coconut milk in my recipes. I used it at Thanksgiving in my sweet potatoes. It was so good. Could not taste the coconut but it made it seem more rich than when I used to use 2% milk.

I also used it in some other things more healthy.

Wondering if the milk freezes well? I do not drink it fast enough and am afraid it will go bad after 7-10 days like the box says.


Next thing I need is Coconut Flour!

i put it in my shakes.............i use my blender and it pulverizes the coconut oil and no chunks for me..........do you have a blender or bullit machine????i think that is what it is called????as it is great for small amounts so i am told.......

Does a serving of coconut milk count as a serving of coconut for the day...like when i use coconut oil 1tbsp in my oatmeal for breakfast? Sometimes I throw in a couple tbsp's of dry unsweetend coconut in my smoothies or protein shakes. I have tried the oil in my shake but dont care for the big solid chunks that dont blend up well....

I made myself some fried eggs and toast withe coconut oil. I think I will mix up some coconut oil and butter so I will use it more. I do love the taste of butter and by mixing it I will use to it more.

I am new to this and in your recipe you have 1T cocoa. Stupid me -is that coconut flour or unsweetened coco powder. This recipe sounds like it would be something i would really like.
This is in the muffin recipe.

I just made an awesome pumpkin soup! I sauteed a bunch of chopped onions in some Earth Balance coconut spread (that stuff tastes sooooooooo good!) and then tossed it into a pot with a can of coconut milk, a huge can of canned pumpkin, and enough homemade turkey broth to make it soup-y (for me, took about 2 cups). It is so freaking good. Creamy pumpkin soup with lots of coconut!

I've also gotten back in the habit of adding coconut milk to my morning coffee.

The best place to buy virgin coconut oil I have found is online. I get mine from Vitacost.com because if I but 4 large jars at one time, I can get free shipping. I like Tropical Traditions, too, but they are far more expensive. I usually get the Vitacost brand at $20/54 oz jar.

On weekdays, after my aerobics class, I have a smoothie made with 2 T coconut oil, 1/2 cup raw milk, 2 raw yard eggs, 2 scoops KAL Pure Stevia Extract and five frozen unsweetened strawberries. Twice a day, right before lunch and dinner, I have a tablespoon of coconut oil in my Rooibos herbal tea with a couple of scoops of the same brand of stevia powder. Sometimes, for a dessert, I like to sprinkle a tablespoon of coconut oil over some frozen berries. I mix the stevia powder into the oil before sprinkling. The oil forms these sweet crunchy bits on the berries when it hits the cold. Pour on a little cold heavy raw cream and ... Yum!

I'm in Northern Canada, and I RARELY see fresh coconuts here. I would be suspicious anyhow... coconuts do nt stay fresh for very long and if it's not organic, could very likely have been treated with some very caustic chemicals.
I buy coconut milk, coconut oil and dried, ribboned, unsulphured, organic coconut. I buy HUGE bags in bulk and store the bags in my deep freeze until I'm ready to use it.
