When you get to a plateau, think of it as a landing on the stairway to your goal. And maintenance is a lifelong plateau, so a bit of "rehearsal" for maintenance isn't the worst thing in the world
I actually have a FABULOUS chocolate cake recipe that uses coconut oil and coconut flour. But I got the recipe from Elana's Pantry. I subbed in the oil; 1/2 coconut oil and 1/2 butter and it was A1! I also exchanged the agave with coconut nectar (you could also use honey) Elana's cakes and cupcakes were voted as some of the best ever. Not just best gluten-free ever. Just BEST ever.
PS. I didn't try the icing. But I have seen icing recipes that use coconut cream with a little sweetener of choice. Or even better try a coconut spread (coconut butter). I bet that would be great! I would even go one further and stick some shredded coconut to the frosting. You could also add some cacao to the coconut cream. MMMMM!!!!
I want to make a great Father's day cake - chocolate, but with virgin coconut oil. Can I substitute the shortening in my favorite recipe for the coconut oil? Or, does anyone have a fabulous chocolate cake made with coconut oil?
