I've been thinking of trying to make Ghee, maybe I'll try that with the coconut oil and ghee. it would be best of both worlds. thanks.

I will add some coconut next time. I forgot that I also had chopped pecans in the topping. Love pecans and coconut.

Well, butter is the "other" healthy fat. lol I like the coconut ghee for a change sometimes. Gives fried foods a nice buttery taste.
The crisp sounds great. i think I would have been tempted to also add some shredded coconut to the topping. YUM!

What are the advantages/disadvantages to using ghee vs just the oil. I haven't seen the coconut ghee in my area.

I made a fruit crisp with the coconut oil mixed with oats, ww pastry flour, cinnamon and brown sugar. The coconut flavor was great. Now I'll experiment with stevia and coconut flour when I have more fruit that's past its prime. It was a good way to use up fruit.

When you get to a plateau, think of it as a landing on the stairway to your goal. And maintenance is a lifelong plateau, so a bit of "rehearsal" for maintenance isn't the worst thing in the world

I have been craving pancakes lately! I have a favorite Jillian Michaels recipe that uses cottage cheese instead of yogurt. Since I already bought the cottage cheese, I think I'll try substituting coconut flour and frying them in coconut oil. Since I have a big container of blueberries, I can have them in the pancakes and on top!

I used coconut ghee instead of butter, stevia instead of honey and cinnamon instead of the dessert spice. I fried them in coconut oil. These ARE the best pancakes I have EVER eaten!
Makes 2 large fluffy pancakes. Since I only eat 2 full meals per day I enjoyed both (guilt free) topped with some Greek yogurt and a small handfull of blueberries.
