I tried this tonight. I liked the sauce and it was easy enough to make but my cod came out tough. I may have overcooked it not allowing for my convection oven, or is cod just like that? I don't usually use cod.
Looks good. I don't have cod but only some salmon. I bet it would work with that.

That sounds really good, I just printed the recipe and will try it... I've got some Cod fillets in my freezer and coconut milk in the pantry. That might be dinner tonight!!

When you get to a plateau, think of it as a landing on the stairway to your goal. And maintenance is a lifelong plateau, so a bit of "rehearsal" for maintenance isn't the worst thing in the world
