This is from Bruce Fife's Coconut Lovers Cookbook. I tried one of his recipes and it was absolutely divine! So, I have confidence in this recipe also.

CREAMY SCALLOPED POTATOES
I can (14 ounces) coconut milk
1/2 cup water
1/4 Cup flour
2 teaspoons salt
1/4 teaspoon pepper
I to 6 potatoes thinly sliced
I medium onion, finely chopped
I red or green bell pepper, chopped
2 cups cheese. grated
Paprika

In a bowl stir together coconut milk. water, Hour, salt. and pepper: set aside. Grease bottom of casserole dish with coconut oil or butter. Cut potatoes into thin slices. Layer half ofthe potatoes on the bottom ofthe casserole, followed by half of the onion, bell pepper, cheese. and coconut milk mixture. Repeat the potato. onion, bell pepper, cheese, and coconut milk mixture. layering with the remaining half ofthe ingredients. Sprinkle top with paprika. Bake at 350 degrees F for 1 hour and 15 minutes, or until potatoes are tender.

I saw a recipe for scalloped potatoes that used coconut milk.... you could use cornstarch or tapioca as a thickener... I'll see if I can find it now.

My sis & I were just discussing Easter dinner and we decided on Ham and potato au gratin.

Does anyone have a recipe that does not have gluten? How do you thicken it? Sis has MS and must avoid wheat and other gluten flours.

I thought I would sub coconut milk for the regular milk.....
