for the creamed spinach, I simply melted some CO in a saucepan, added some finely diced onion (about 2 tbsps), some cumin, cardamom and a little bit of minced garli. A pinch of sea salt too. Added about of cup of frozen, chopped, organic spinach. I let the spinach cook abit (and thaw out), then added about 1/4 cup of coconut milk. Served it up on a plate with the fish patty on top. YUM!!!
