After reading all the replies about your delicious soup, I made a similar version by adding curry powder. At the end, I added some baby spinach. Delicious!

Thanks. Looks great! I love fresh garlic in the winter in soups so I will use all 6. Thank goodness DH loves garlic too huh? I will follow the recipe the first time. Then I may add a jalapeno or 2 for a little kick. Or a serrano or 2. I just love to improvise in the kitchen. emoticon

Here is the soup I made today. Perfect for a cold snowy day.

4 c lentils rinsed and drained (I only had 3 cups of green and red.)
32 oz veggie broth
2 c water
1 med onion diced
2 c carrots sliced
1/2 c celery
28 oz diced tomatoes (I only used one 14 oz can)
1 large potato
4-6 cloves garlic (I only used 2)
2-3 bay leaves
1/2 t salt
1/2 t pepper

Put it all in a large stock pot on the stove and simmer for a few hours. I put it on at 10am and ate it at 1pm. I also kept adding water as needed so that it all didn't cook out.
