Thanks Boni. The "Black Bean and Butternut Squash Burritos" and "Emily’s Butternut Squash and Black Bean Chili in Pumpkin Bowls" look good. And butternut squash is a new discovery for me. I decided to try it late last fall when I decided to transition first to vegetarian then vegan.

You can eat the skin of delicata squash, and one of my favorite preparations is stuffed. Scrub, cut in half lengthwise, de-seed, roast cut-side down for 30-40 minutes in a pan/dish with a little water in the bottom. Scoop out leaving about 1/4-inch flesh, mix with whatever you want (I did rice, wild rice, onions, mushrooms, sage, thyme, and dill the last time), fill the skins with the mixture and put back in the oven until the tops are nicely browned.

With butternuts, it IS a lot easier to remove the peel once cooked, but if you want to do roasted cubes, the easiest way to peel it is to cut it approximately in half, height-wise, so you have the long skinny part, and the bigger, bulbous part (that end has the seeds.) It's more stable for peeling this way, and you have less squash to try to handle while scooping out the insides.

The easiest way to cook a butternut squash is to cut it in half (be careful because it's hard and you could lose a limb), take out the seeds, put it in the oven at 400 degrees for about 30 minutes. Super yummy and easy. From there you can eat it just like that, put it in soups, make dips or whatever else you want to get into. I don't bother peeling it until it's cooked but that's just me.

Oooohhhh! That DOES look good, Boni!!! Trouble is, I'm not familar with some of those ingredients.

But my guess is everyday ingredients could be substituded. For instance:

Italian unsmoked cured bacon.....why not just use vegan bacon bits or sliced vegan italian sausage?

unsalted butter...use vegan spread, like Earth Balance

phyllo sheets...I have no idea what that is! Ha!

grated Parmigiano-Reggiano...I have no idea what this is, either! (Is my southern roots showing??? Ha!)

I love baked squash also, so simple with a little brown sugar and cinnamon. It also make great soup..

I like it, especially delicata and acorn, halved then baked in the oven with vegan butter and brown sugar. Not very "diet friendly" but... I also grill them, sliced with a few spritzes of olive oil.
