You can also sprout it. It produces pretty, pinkish purple sprouts that taste a bit like beets. Earthy.

I had cooked amaranth in a salad yesterday, and when i tracked it, found that it is more or less in "perfect proportions" to my nutrient goals.... which is kind of interesting.
It was my first experience with this grain, and wondered if anyone else uses it, and what recipes you have. It is one of the few "complete protein" grains, so I would like to work it more into rotation.
