I had to tweek some of the ingredients (the price of cauliflower is outrageous here, used cabbage and red pepper) but love how it came out! Even called my mother (who is changing her eating habits)and gave her the recipe. Thank you for sharing!!!!

Yeah, I just pulsed it in my food processor. It's pretty fine. I think it tastes just like the original without the extra ingredients.

Yes, this does sound delicious, Kelly! It appears in the pic that the brocolli and cauliflower are chopped as fine as coleslaw would be...is this the case with this salad?

Will definitly be saving this one to try soon (although I don't have those same ingredients you mentioned you did not have on hand and doubt they are even sold in my area.)

I made this salad this weekend. I love it! Every time I go to Whole Foods I have to hit up the hot/cold bar and get at least a scoop of this salad. Now that I know how easy it is to make my own I can have it any time.

I didn't have any currants so just used some extra raisins and I didn't have any kelp granules so I left them out. It makes a ton so I halved the recipe and still have a lot.
