My friend is a raw vegan chef and got me hooked on this kale salad. It's so healthy and delicious. I eat this once a day. Massaging the oil and ingredients into the kale really breaks it down and evenly coats every bite.
1 head of kale cleaned, chopped and placed in a large bowl
Pour on
1 TBLS sesame oil (you can use olive or flax, I just happen to have a lot of sesame oil right now)
a good dose of sea salt
1/2 of 1 lemon juice
I massage the kale good until I see that is all all coated an begun to break down. I then add
2 tsp of nutritional yeast
2 TBLS of hemp seeds/flax seeds/pumpkins seeds
2 cloves of chopped garlic
Mix well. I find that I usually want another 2 tsp of nutritional yeast -- a vegan god send. It's packed with crazy B-12 and other vitamins and adds a slightly cheesy, salty flavor. So delicious.
