I was flipping through the book last night and came across the suggestion to use olive oil instead of mayo to make tuna salad. I'd been avoiding it altogether and honestly never really think to make tuna salad when I'm not playing the game either...but this was a nice change, as my meals have gotten a little monotonous lately:
1 can chunk light tuna packed in water
1 tsp olive oil
1 tsp balsamic vinegar
1/4 chopped small red onion
1 chopped celery stalk
ground black pepper to taste
I wrapped this in a Joseph's Flax, Oat Bran & Whole Wheat Pita (only 60 kcals, 8 g carb for the whole pita), had some sliced cucumber, celery stalks and baby carrots on the side, then had 1/2 serving of grapes as a dessert to complete my carb! So good, I'm going to do it again tomorrow (since I doubled the recipe and stored the rest in the fridge)!
