Peach Jam (from Barbie, off the sure-jell box)

4 cups finely chopped peaches
2tbsp lemon juice
5-1/2 cups sugar

Prepare fruit and stir in lemon juice , place into sauce pan and add 1 box of pectin and 1/2 tsp. of butter to reduce foaming .
Bring mixture to a boil stirring constantly .
Stir in sugar and bring back to a full boil and boil exactly 1 minute stirring constantly . after 1 minute remove from heat and skim off any foam .
Ladle into jars. wipe rims and place on caps .
Place jars into hot water bath canner and make sure water covers lids 1-2 inches , process 10 minutes after water come to a full rolling boil .
After 10 minutes remove from canner and place on towel and cover with another towel and let cool and seal . If any does not seal place in refrigerator .

I MAKE WITH POWDERED MILK NOT LIQUID
I DON'T KNOW CALORIES OF PROTEIN POWERED 2 SCOOPS
I DON'T KHOW HOW MANY SERVINGS WE JUST FIX AND DRINK

MY FRESH BANANA MOCHA SHAKE

PUT IN BLENDER
1/3 CUP POWERED MILK
1 FRESH BANANNA BROKEN UP
1 CUP OF WATER

PUT THE ABOVE IN BLENDER AND BLEND UNTIL IT IS SMOOTH

THEN ADD ALL INGREDIENTS TO BLENDER
2 SCOOPS OF PROTEIN POWDER
1TABLESOON UNSWEETNED COCOA
SPLENDAR TO TASTE
CRUSHED ICE
2 TABLESPOON OF SUGAR FREE INSTANT PUDDING (ANY FLAVOR)

BLEND UNTIL THE SMOOTHIE IS THE WAY YOU LIKE SMOOTHIES

Tuscany White Bean Soup

2 cups cooked navy beans
2 medium onions, coarsley chopped
4 carrots sliced sliced
4 celery stalks coarsley chopped
4 garlic cloves coarsely chopped
2 1/2 cups vegetable stock
2 tbsp dried parsley
1 tsp basil
1 tsp italian seasoning
2 cups kale washed and chopped or spinach washed
1/2 head cabbage washed and shredded
salt and pepper to taste

In a large pot, place the vegetables and stock, and seasonings , cook until vegetables are tender, add the cooked navy beans and cook for 30 mins, add salt and pepper to taste. Serve hot with ciabatta buns on side.

1/2 starch Ingredients
11 cups cold super skim milk
2 tsp. vanilla extract
2 packages (1.5 ounces each) instant sugar-free vanilla pudding mix
Artificial sweetener equivalent to 1/3 cup sugar
1/2 tsp. ground nutmeg



Instructions
In a large bowl, combine milk and vanilla. In another bowl, combine the dry pudding mix, sweetener and nutmeg. Whisk in the milk mixture until smooth. Refrigerate until serving.

105 CALORIE 1 CUP I USE UNSWEETNED ALMOND MILK SO THAT LOWERS CALORIES. I USE THIS AS COFFEE CREAMER ALSO

Broccoli Soup

1 box (2pounds) Velveeta , cut in cubes
1/2 cup chopped onion
2) cans cream of cerley soup
2 ) 10oz. packages of chopped broccoli
1 cup chicken stock
1/2 teaspoon black pepper
3-4 cups milk or half & half
Cooking spray

Directions:
Spray crockpot with cooking spray . Mix 3 cups milk or half & half and the rest of the ingredients in slow cooker. Cook on low 2-3 hours or until broccoli is tender , stir every once in a while , if soup is too thick add more milk .

Directions

WASH PARE, CORE AND CHOP APPLES
PUT IN LARGE KETTLE APPLES , 1/4 CUP SWEETNER AND 6 TABLESPOON PECTIN MIXTOGETHER. ADD 2 CUPS WATER. BRING TO HARD BOIL FOR 5 MIN. THEN ADD REST OF SWEETNER BOIL FOR 1 MIN. HAVE A METAL TABLESPOON IN ICE WATER . PUT I/2 SPOONFUL AND COOL TO ROOM TEMP. CHECK FOR THICKNESS. IF NOT THICK ENOUGH ADD 1 TABLESPOON PECTIN BOIL FOR 1 MIN. THEN CHECK AGAIN. REPEAT UNTILL THICKNESS DESIRED. I BLENDED MINE UNTIL SMOOTH OR YOU COULD LEAVE CHUNKY .CAN OR PUT IN REFRIDGATOR.

Serving Size: 4 CUPS

the orzo salad sounds good. I started making my own salad dressing.

2 Tblsps Light mayo
a little olive oil
a little vinager (bals,red wine or apple cider
your fav spices (italian is mine,oregano,basil,a tiny red pepper etc.)
worchester sauce

mix together and let it set up for a couple minutes.

Greek Orzo Salad

2 Cups Orzo
12 Tbls olive oil
10 Tbls red wine vinegar
1 large shallot
2 tsp dried oregano
1 tsp pepper
1/4 cup minces parsley
3 large tomatoes, diced
1 cucumber, diced
12 oz feta

Cook orzo according to box directions, do not add salt.
Drain pasta
Cook sliced shallot in 1 Tbls olive oil until soft
Whisk together remaining oil and vinegar, Add to Orzo pasta.
Add onion, pepper, oregano and parsley to pasta.
Let marinate in fridge 2-24 hours
At serving time toss in tomatoes, cucumber and feta

Makes 10 cups

You can add cooked chicken to this for a yummy meal
