OK I got lazy and picked a recipe off the internet....
So this morning, I pulled out the one I use...Here it is.
8 Cups Sliced pickles or cukes (I prefer pickles as I don't like the seeds in the cukes) You can use Burpless cukes !!! 1 med to large onion sliced (any type but red) 1/3 cup Kosher or Pickling salt (do NOT use Table Salt) 3 cups white sugar 3 cups white vinegar 1 1/2 tsp. celery seed 1 1/2 tsp. mustard seed 1 tsp. Turmeric
1. toss pickles, onion and salt - set aside. 2. combine remaining ingredients in a bowl or pot. *** 3. Divide pickles between 4 pint jars. **** 4. pour vinegar mixture over pickles. 5. Put on lids and refrigerate at least 8 hours...
*** I simmer this for a few minutes and pour the hot mixture over the pickles. **** I put all of this in one half gallon jar...
Here is her answer about the quantity of pickles for this recipe... (I had to laugh) !!!!
There is no quantity listed in this recipe for the amount of cucumbers intentionally; just use the amount of cucumbers you have just picked. If cucumbers are left around before being canned, while waiting for you to accumulate a certain quantity, they will become rubbery; so use only freshly picked cucumbers. Make enough of the pickling solution to cover the slices for as many jars as you fill.
This sounds so good and tastey. thanks a bunch. I'm guessing theres maybe 4 cucumbers in this recipe? You didn't list it in the ingrediates. Also is canning salt and turmeric sold by seasonings and spices?
Thank you so much for posting this recipe! I made several quarts of these pickles already and they are hanging out in my fridge waiting ... can't wait to try them! I usually use an old fashioned crock given to me by my grandmother and go through the process for a couple weeks or so to make other types of pickles & can them, etc. and I wasn't up to going through that this year. I have so many cukes from my garden this year all coming in at one time, due to the weather we've had and was wanting to do something different. This recipe came at the perfect time. I tasted the juice and it is delicious. Again, can't wait to try these! Thanks again! :-)
These are the Easiest Bread and Butter Pickles Ever !!! And Do they taste Good !!!!

REFRIGERATOR BREAD AND BUTTER PICKLES
3 c. sugar 3 c. WHITE vinegar 1/3 c. canning salt 1 tbsp. mustard seed 1 tbsp. celery seed 1 tbsp. turmeric
Wash slicing cucumbers and slice thin. Layer in glass jars with onion as desired. Combine above ingredients - sugar, vinegar, salt, mustard seed, celery seed and turmeric. Heat slightly until sugar is dissolved. Let cool, then pour over cucumber slices. Cover and keep refrigerated. Let stand a day before starting to use.
