Stuffed French Toast

Batter: 2 eggs, 1 cup of milk, ½ cup of sugar, 1 tsp cinnamon, 1 tsp vanilla. Mix thoroughly. This will coat four sandwiches.

Filling: 1-1/2 cup cream cheese, ¼ cup dark chocolate chips, ½ cup medium diced bananas OR Strawberry slices

Spread creamed cheese on both slices of bread, add fruit and chips and put the slices together. Carefully dip in batter (take off your rings and use your hands, it’s easier – it will get messy). Turn over sandwich and dip again. Shake excess of and placer sandwich in greased preheated pan. Cook until brown (approximately 2 minutes), turn over and brown on other side.

Serve with warm syrup or ice cream.


(I made the filling with strawberry flavored creamed cheese because I had some in the refrigerator, white chocolate chips, and strawberry slices. AND it was GOOD.)



(You may bake this at 350 degrees for 8 minutes if you prefer)

I'm into simplicity..I like just a bowl of oatmeal ( 1-1/2 c. water with 1/2 oatmeal) cooked till creamy..adding to a serving bowl 1 T chia, 2 T flax seed meal, 1 lg. apple, chopped and 1 T olive oil..sprinkled with cinnamon and stevia..Yumm !!

This is a breakfast casserole I made for supper. I don't eat this much for breakfast.

Bacon and eggs pull-aparts

Preheat oven to 350 degrees and spray with Pam an 8x13 baking dish.

Mix in a medium bowl:
2 eggs
1/4 cup milk
S&P
Whisk
Add
1/2 cup cheddar cheese
Pieces of Canadian bacon, ham or sausage, uncooked.

Take 1 tube of Pillsbury Grand biscuits and cut them into quarters.

Place biscuits in bowl with egg mixture and coat well.

Pour into 8x10 dish in a single layer.

Bake at 350 degrees for 30 minutes.

Some people call this monkey bread but this is easier to make.

OVERNIGHT STICKY BUNS

1 (25 oz.) bag Rich's frozen rolls
1 (3 oz.) box butterscotch pudding (not instant)
1 1/4 c. brown sugar
3/4 c. butter
1 1/4 tsp. cinnamon
3/4 c. chopped nuts (pecans or walnuts)

Put frozen rolls into a bundt pan. Sprinkle with pudding mix. Melt butter, add sugar and cinnamon. Cook until sugar melts. Boil until sugar dissolves. Add chopped nuts. Pour mixture over the rolls. Cover tightly with foil. Leave on the counter overnight.
In the morning, uncover and bake 20-30 minutes at 350 degrees. Wait 5-10 minutes, then invert onto a serving platter.

Hi, Not sure if anyone is interested in a breakfast recipe though I make these all the time and they are yummy, moist and so easy.

2pkg jiffy corn muffin mix
1 lg can crushed pineapple

Mix both together and bake at 350 degrees for 20 minutes or until a toothpick comes out clean. Makes 12 muffins at 100 calories each.

Give them a try and let me know if you like them!!

On the SparkPeople calendar today they have a recipe for "Apple Cinnamon Crockpot Oatmeal" which sounds good. I think I will try it, but the first time I'm going to do it during the day so that I can see if it really works overnight. I guess I'm just suspicious.

The recipe is: Combine 2 cups oats, 1 chopped apple, 1 tsp cinnamon and 4 cups water in slow cooker. Cook on low overnight and sweeten to taste. Serves 4. 170 calories, 2 g fat.

Spark calendar recipe: Morning Frittatas, serves 9.

Mix 5 eggs, 1 T low-fat milk, 1 cup diced tomato, 1 cup steamed broccoli and 2 oz. goat cheese. Pour into greased muffin tins and bake at 350 degrees F for 15 minutes. Serves 9. 71 calories, 4 grams fat

Hungry Girl's Big Bowl of Breakfast

Lots of food - few calories:


Hungry Girl's Big Bowl of Breakfast

1 tray Green Giant Just for One Broccoli & Cheese Sauce
3/4 cup frozen potatoes O'Brien (like the kind by Ore-Ida)
3/4 cup fat-free liquid egg substitute (like Eggbeaters Original)
1 slice Canadian bacon, chopped
2 tablespoon fat-free cheddar cheese

Directions:
Prepare broccoli & cheese sauce according to package directions. Set aside.

Bring a large pan sprayed with nonstick spray to medium heat. Add egg substitute and scramble for 2-3 minutes, until fully cooked. Place scrambled egg substitute in a microwave-safe bowl and set aside.

Remove pan from heat, re-spray with nonstick spray, and return pan to stove. Raise heat to medium-high and add potatoes. Cook for 3-4 minutes, stirring occasionally, until thawed and lightly browned.

Add Canadian bacon and cook until hot and a little crispy, about 1-2 minutes.

Add potato/bacon mixture to the bowl with the egg scramble. Add broccoli & cheese sauce and mix to combine.

Sprinkle shredded cheese on top of the bowl, and microwave for 30-45 seconds, until cheese has melted. Grab a sturdy fork and dig in!

Serving size: The entire bowl!

I just threw these things together in a fry pan. If you like you can add other things like green or red pepper, mushrooms, etc.

25 Minutes to Prepare and Cook



Ingredients
1/2 cup Hashed Browns
1 onion slice, diced
5 slices Pepperoni (chopped)
1/2 cup Eggbeaters


Directions
In Pam-sprayed frying pan, cook hashed browns with onion for about 10 minutes, add & mix Pepperoni for about 5 minutes, then add & mix in eggbeaters.

Optional : Season with S&P

Here is the egg bake recipe;

Breakfast Casserole‭

Cook Time:‭ ‬1‭ ‬Hour‭ ‬10‭ ‬Minutes‭ ‬Ready In:‭ ‬10‭ ‬Hours
Yields:‭ ‬8‭ ‬servings

INGREDIENTS:
1‎ ‏pound pork sausage
6‎ (‏1‎ ‏ounce‭) ‬slices bread,‭ ‬cubed
2‎ ‏cups shredded Cheddar
1‎ ‏med onion,‭ ‬chopped‭
6‎ ‏eggs
2‎ ‏cups milk
1‎ ‏tsp salt
1‎ ‏tsp pepper
1‎ ‏tsp ground dry mustard

DIRECTIONS:
1.‎ ‏Place sausage in a large,‭ ‬deep skillet.‭ ‬Cook over medium-high heat until evenly brown.‭ ‬Drain,‭ ‬and set aside.
2.‎ ‏Layer bread cubes,‭ ‬sausage onions,‭ ‬and Cheddar cheese in a lightly greased‭ ‬7x11‭ ‬inch baking dish.‭ ‬In a bowl,‭ ‬beat together the eggs,‭ ‬milk,‭ ‬salt,‭ ‬and mustard.‭ ‬Pour the egg mixture over the bread cube mixture.‭ ‬Cover,‭ ‬and refrigerate at least‭ ‬8‭ ‬hours or overnight.

One could make it more healthy by using low fat sausage and cheese. I use 1% milk because that is what we usually have on hand. I don't know about the 7x11 baking dish, for a larger casserole, I add 2 or 3 more eggs and bake it in a regular cake pan (9x13).
