La Tortilla brand makes low carb high fiber tortillas. You can fill them with any protein and/or veggies and eat them cold (as wraps) or heated (like a burrito or enchilada).

Spaghetti squash, roasted, mixed with a little egg and cottage cheese, on the bottom of a shallow casserole dish. Then layer with seasoned browned meat, Italian veggies (garlic, onion, tomato, squash, eggplant), and mozzarella cheese. Bake in the oven as a casserole.

Sausage and peppers with zucchini

saute 3 oz sausage, 1/2 cup red or green pepper 1/4 cup onion and 1/2 cup zucchini.

not sure what you would put with it, I use the gluten free pasta or sometimes rice.

You are correct, there are lots of low carb and diabetic cookbooks out there - I own just under 300 of them.

Unfortunately, both the diabetic and low carb cookbooks don't buy into the carb limit (no more than 40 carbs at any meal) with which we have found great success.

Knowing others must follow a very low carb diet, I was hoping to 'scam' some of those recipes to shake up our routine and make meal time more interesting and enjoyable.

i make romaine hearts of salad dinners. i put tomatoes,cucumbers, green beans,carrot pieces and either grilled chicken, shrimp. tuna salad on them.

Does anyone have simple, few ingredient low carb recipes they are willing to share?

Some make-ahead meals would be greatly appreciated also.

With a diabetes diagnosis, we're cutting carbs to no more than 40 per meal - it has not been easy finding recipes and hubby (and I) is getting tired of the same things over and over and over. . . .
