ya know, I never thought about it, but yeah - they have similar textures. Probably would work in many recipes that call for water chestnuts. And, as I've only ever seen water chestnuts canned, it's nice to think you could get something fresh instead. I wonder what the nutritional differences would be.

I wasn't wild about it this time around, but I DID like it better than I did a few years ago. Progress! :)
Someone I know used chopped water chestnuts to give a bean salsa some crunch. I think jicama would do well in that role too.

ooo, I love jicama - I like to dice it up and add it to salad. Kind of makes me think of cold corn :) Sweet and crisp!

I am revisiting jicama this week. I normally dislike the "raw potato" kind out mouth feel (though it is fine mixed into recipes). I haven't had jicama by itself in a few years, so I figure I will give it yet another chance.

I've had peas before but I tried Trader Joe's Inner Peas which are pretty great. I'm a pretty big veggie eater though so I've tried a bunch of different kinds, nothing new though.

Feel free to add. We can always use more friends in life!

I hate turnips they stink and it's so long since I had some that I don't know what they taste like

Mmm, I love Asparagus, and it cooks so quickly, especially the thinner stalks!


Today I'll be pickling turnips for the first time. Although I have certainly eaten them before, I've never pickled them myself. I love to do quick refrigerator pickling, as I am too paranoid for the long term/sterile jars kind of thing.

I used to dislike asparagus when I was growing up, because my mom only ever served it out of a can (slimy and brownish-green is not terribly appetizing!) but I'm really glad I gave it another try as an adult. Fresh asparagus is one of the go-to dinner sides at my house, and my whole family enjoys it. We've grilled it, steamed it, sauteed it... and it's always delicious!

Another once-under-appreciated veggie is spinach. My mom had a thing for canned food, I guess... or maybe it's just expensive to afford fresh produce for a family of 6! I tried fresh spinach for the first time a few years ago, and now it seems like I always keep a box in my fridge. Baby spinach makes such a nice salad (with strawberries, a few sunflower seeds, and some raspberry vinaigrette, yummy!) and it goes great with pasta, or in a sandwich.

Oh, I have not been eating my veggies lately. Asparagus is great though. I usually steam them and add a little parmesan cheese on top. But I will try roasting them, sounds yummy. My favorite way of eating veggies is salad. I make a homemade dressing with flax seed oil, vinegar, and mrs dash for seasoning. Now I'm craving my veggies...that's a good thing!

Ooh, I love asparagus. My spouse hates it, so I only have it when I eat out. :o)

I am not sure if color counts as new, but I did recently buy a bunch of multicolored carrots: yellow, orange, red, and purple. They were so pretty, and made a beautiful soup!

Asparagus is my new favorite since last year, I love buying five bundles at a time so they last the week. If the smell isn't wretched when I go to the bathrrom, then I'm not eating enough.

What new veggies have you tried lately.....I just bought some asparagus and roasted them and actually enjoyed them what about you what have your tried lately
