One of my favorite no cook meals is hummus and tabooli (tabbouleh) with a garlicky pita.

There's a lovely collection of hummus recipes at Cooking Light www.cookinglight.com/food/quick-healthy/hu

This is my favorite tabooli recipe www.healingwiseforum.com/viewtopic.php?f=9

I don't put celery in mine. Many recipes call for mint, but I don't care for mint in my tabooli.

Sometimes I make my own pita using www.kingarthurflour.com/recipes/whole-whea
t-pita-with-middle-eastern-salad-recipe
or smittenkitchen.com/2009/03/pita-bread/ I often add some garlic powder (not garlic salt) because I love the taste. In the summer, I usually buy it because there is a local brand that is absolutely delicious - and I don't have to heat up the kitchen.

I often put beans in my salads. I make meatless taco-style salads. I substitute kidney beans for the meat, leave off the cheese, and use salsa for dressing. Oh, I don't use chips either. Delicious!

I found a bean salad under Spark Recipes called Mexican Black Bean Salad that is pretty tasty. It is easy to do a double batch and store the left overs for later. Plus a bonus of fiber with all the beans! You can add extra veggies to make it heartier but is is rather filling.

Record breaking heatwaves across much of our country and no end in sight here in Georgia....so, aside from a salad...what are some of your no cook or almost no cook meal plan options?

Salads are my number one favorite....I let the local deli do the cooking and grab rotisserie chickens...ditch the skin...and use the chicken in chef salads or an 'almost no cook, quick stir fry....

crock pot meals are another almost no cook option and don't heat up the house in the process...

Have had a meal of simple fresh sliced veggies with hummus a couple times this past week as well...now if I could just fix something to eat from the comfort of a nice cool pool.....emoticon
