Whatever greens we have with whatever fresh veggies we have. Sometimes I add leftover chicken or eggs. For "dressing" I use mandarin oranges, raspberries or some other juicy fruit.

I don't use recipes for salads; I just use whatever I'm in the mood for. I am allergic to fresh tomatoes and I dislike cucumbers, so I never use them. A typical salad includes two or three cups of mixed greens. I always throw in spinach as I always need the iron. I may add cheese, onion, garlic, pimiento, sliced squash and zucchini, peppers, and whatever beans are on hand. Sometimes, I add dried cranberries. Then I add a fruit, usually pineapple or apple, and something sour, like a pickle relish. I find that if I have that contrast of sweet and sour, I don't need a lot of dressing.I normally use none or only one ounce. If I am eating this as a main dish, I add some other protein, usually chicken breast, but sometimes turkey, ham or bacon. If I need a fat, I add some nuts. A lot of it depends on what nutrients I am missing for the day. There are just SO MANY options.

One day at a time; one pound at a time.

I love salads because they are healthy and make me feel full and satisfied. emoticon

Lately, My favorite salads are a mixture of fruits and veges. Here is one.

4 or 5 large leaves of Red or Green Lettuce torn into bite size pieces
1 gala apple cut into chunks
1 medium Hass avocado cut into chunks
3/4 cup baby carrots
1 large tomato cut into chunks
1/8 cup of raisins or craisins or a mixture of both.

Split all the ingredients up into 2 large individual salad bowls.
I don't mix the salad much I just spread the chunks around on top of the lettuce and sprinkle the raisins or craisins on top to make it kind of pretty.
I have also added a few almonds to this at times or cut up some strawberries or kewi and sprinkled on top.
Add little drops of your favorite dressing.
