The greek yogurt sub. is a great one! I love it, do it with mexican food at home or with indian fare at home. Gives a nice protein boost, too and the flavor is awesome.
Sometimes instead of jam I'll put fresh fruit on my pb&f sandwich, like freshly sliced strawberries. That's not to say I don't also eat jam sometimes ;), but its a good way to add fruit and to add fiber.
