Eggplant is another thing that I absolutely hated when I was a kid eating my mother's cooking, but now I just love it. My favorite way to fix it is to make eggplant pizzas. I take an eggplant and cut it into slices that are about half an inch thick. I coat the slices in olive oil and put them in the broiler for a few minutes to brown them. Then I put marinara sauce on them and add grated mozarella and pepperoni and broil them again until the cheese has melted. Really tasty, and I guess you could put other things on your "pizzas" besides pepperoni.
I also love to use eggplant in veggie lasagna and spaghetti sauce.
