There is a recipe on here for Healthy Mousaka that my husband loves-he likes it better than lasagna so I make it fairly often. I want to try making the eggplant pizza-sounds interesting, I am always looking for ways to incorporate more veggies for us in new and different ways.

Eggplant is another thing that I absolutely hated when I was a kid eating my mother's cooking, but now I just love it. My favorite way to fix it is to make eggplant pizzas. I take an eggplant and cut it into slices that are about half an inch thick. I coat the slices in olive oil and put them in the broiler for a few minutes to brown them. Then I put marinara sauce on them and add grated mozarella and pepperoni and broil them again until the cheese has melted. Really tasty, and I guess you could put other things on your "pizzas" besides pepperoni.
I also love to use eggplant in veggie lasagna and spaghetti sauce.
My favorite thing to do with an eggplant is cut it in half lengthwise and roast it for about 45 minutes, till it's very soft and mushy. Then I scrape out the flesh and add it to my favorite pasta sauce. It adds a nice flavor and creaminess to the tomato sauce.
