"I made a discovery and would like to share it with those of you who like eggplant. I found that if I peel the eggplant, slice it, and then steam it in the microwave until it is tender. There are no added calories and it is great. (I use a 1970's harvest gold tupperware microwave steamer with a bit of water in the lower level; the eggplant on the insert doesn't touch the water.) If anyone wants some tips on how to prepare some healthy, delicious local dishes, let me know and I'll share with you. Today I put the eggplant on pizza. Yum."
Anybody else with tips?
